Mojito Doughnuts

I recently bought a doughnut pan and wanted to come up with a creative idea, transforming my favourite drink, a mojito, into a doughnut. Of course someone has already tried this! I guess I need to think more outside the box. Instead of trying diethood.com's recipe out completely. I modified the recipe that came with the pan and used a similar glaze to diethood.com, to make my version of mojito doughnuts. First off, I had no idea doughnuts were so easy to make especially using this special pan. The recipe from the pan was just ok though... even with my slight changes, so I think next time I'll try a different one out. Although, these doughnuts were still tasty, with a slight taste of rum and then mint and lime to round it off! They quickly disappeared! Next time I try them out, I think I will make them even more boozier. I might even try out my favourite cupcake recipes and enjoy them in doughnut form. What is your favourite doughnut recipe?

Strawberry Lime Mojito Loaf Cake

I recently did a product review and I wanted to make a recipe that could use the product I was testing out.  Last month, I made a Clementine Basil Mojito Loaf Cake and wanted to try it  out with different flavours. I decided that I wanted to use strawberries and thought it would pair well with the mojito flavours. It tasted great!! I loved it and the smells whilst making it were really nice. I preferred this one to the citrus one I made last time, you could really taste all the flavours separately yet mixing altogether in your mouth. I can't wait for summer and mojito drinks in the sun, ready for warm weather now!

Recipe
Inspired by Barefoot Kitchen Witch
Ingredients:
Finely grated zest of 2 limes
10 mint leaves, finely chopped
1 cup sugar
5 tablespoons unsalted butter, melted
1/4 cup fresh lime juice
1 tsp strawberry juice concentrate
1 cup strawberries, chopped
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup milk
For syrup:
3/4 cup icing sugar
1/4 cup fresh lime juice
1/4 cup rum
1 Tbsp strawberry juice concentrate
5 mint leaves, finely chopped

Steps:
  1. Preheat oven to 350F/175C. Butter a 8" x 4" loaf pan and set aside.
  2. Combine lime zest, mint, and sugar in a bowl and rub with a back of a spoon to release oils in the lime zest and mint and set aside.
  3. Combine flour, baking powder and salt and set aside.
  4. Mix the butter into the sugar mixture on high speed until light and fluffy.
  5. Add 1/4 cup lime juice and 1tsp strawberry juice concentrate, followed by eggs. Beat until smooth.
  6. Alternating between the flour mixture and the milk, blend these into the mixture in the bowl.
  7. Pour the batter into the greased loaf pan, place on middle rack in the oven and bake for about an hour, or until a toothpick inserted in the center comes out clean.
  8. While the loaf is baking, combine the syrup ingredients until sugar is completely dissolved.
  9. When the loaf comes out of the oven, pour the syrup evenly over the top. Let the loaf cool in the pan for an hour before removing.

Steak Slice with Broccolini

This is my second favorite way to have steak and I wanted to share the recipe with you. It's nice and quick and the only way I will make mine. My favorite steaks are grilled by my Dad and I'm not even going to attempt that as they will be no where near as good as his grilling. Since I don't have a nice fancy grill like him, I use a grilling pan for my stove top and this recipe produces great steaks. This is my take on a Nigella Lawson recipe.

Recipe
Inspired by Nigella Express
Ingredients:
650g of 2.5cm thick Rump Steak
100ml Extra Virgin Olive Oil
Zest and Juice of 1 Lime
2 Cloves of Garlic, chopped
Good Handful of Coriander, chopped
2 Spring Onions, chopped
Juice of 1/2 Lemon
Salt and Pepper to your liking
200g Broccolini

Steps:
1. HEAT your grill pan to a very high heat. While it heats, cut away any fat from around the edge of the steak.

2. PREPARE the marinade for the steak, mix together the EVOO, lime zest/juice, garlic, and coriander  in a wide swallow dish.

3. GRILL the steak for two minutes on each side. Then place in the marinade for five minutes on each side. Juice the lemon into hot grill pan and let it bubble with the meat juices then pour over the marinating steaks. Season the steak with salt and pepper. Once you have marinated the steak, slice into thin strips.

4. STEAM the Broccolini for about 5-7 minutes. Once steamed, arrange on plate and put slice steak on top.

Yum!!
